Idiot-proof deep dish pie crust recipe?

My go-to cheat ready mix is not being sold anymore and I am making my first pie from scratch this week. Words of comfort are also gladly accepted.

Pie crust is too tricky to be fully idiot proof, no matter what people claim. :( That said I've heard good things about this one:

But honestly, if you're worried just buy ready made pie crust.

My friend has one that she claims is completely fool-proof - I can ask her if you want and see if she's willing to give it up.

Makes 2 crusts

6 oz unsalted butter, cut into 1/2 inch cubes (VERY COLD)
2 oz vegetable shortening, cut into 1/2 cubes (VERY COLD)
5-7 TB vodka* (VERY COLD)
12 oz AP flour + some for dusting
1 tsp table salt (NOT KOSHER SALT)
1 TB granulated sugar

Refrigerate your fats and liquid at least 1 hour, but preferably overnight.

Put your dry ingredients to the bowl of a food processor and pulse a couple times to combine. Add the butter and pulse 5-6 times until it looks mealy. Then add the shortening and pulse to combine.

Add 5 TB of the vodka, and pulse. You want all the dry stuff moistened, and for the dough to come together and hold its shape when you squish it. But not too wet or it'll be sticky. Add more vodka, 1 TB at a time, until it has the right consistency.

Divide the dough in half and shape each ball into a flat disc. Wrap it up in plastic wrap and refrigerate for at least 1-2 hours and up to overnight. When your pie filling is ready to go, roll out the dough on a floured surface.

*Or the flavored liqueur of your choice- pair with your pie filling, if you so desire. Applejack for apple pie crust, limoncello for lemon meringue pie, etc.

I have one that's literally just flour & milk, mixed in the pie tin & kneaded to shape. it's crumbly & perfect for pumpkin pies but I'm not sure it'd be good for any old pie.
