The variation I get most bugged by is musical tastes-I get that with some canons, you may not know what sorts of music the characters listen to, and people can listen to all sorts of genres you wouldn't expect them to listen to...
...but if ALL the characters in a story just happen to like the exact same sorts of latest top 40 pop songs, I'm going to assume that's the result of the author's personal musical tastes filtering in.
The time period a canon is set in is worth considering, too, when it comes to musical tastes. Unless you're writing a modern AU, if your canon is set in, say, the 1960s, wild guess is they'll probably be a fan of music from, well, that decade, or perhaps music from decades prior to that one.
