You aren't wrong regarding fandom liking their pretty boy pairings. Hell, I like them too.

But as for Gimli mostly being comic relief... Legolas didn't have much to do in the films either, and even diluted their friendship is stressed just as much as Aragorn and Legolas', so it might be a shallow thing or it might be something else I'm just not capable of understanding, lol.

Since you remind me of it, I do agree with that assessment of Legolas. I have seen it commented on that he's the "Stating the Obvious" character of the series.

And I do think it's an over-all shallowness thing, both shallowless in characterisation in the movies and shallowness on the part of fans too.

Probably. Though they're my favorites, the LOTR films had things they could've done better. Overall I think they were fantastic though, and unless each film was about 30-40 minutes longer, I don't think there was ever a chance of a completely straight adaption.

Yeah, I have watched through the Appendices (DVD extras) a few times and there's mentions of the things that got changed, tweaked and swapped around, and I usually agreed with the reasoning behind it. A straight adaption would drag terribly and be near unwatchable. The Hobbit could have been better though, a lot better than it is.
