Your friend definitely needs to open her eyes to other stuff out there. Yes, there is amazing fanfiction that exists, just as there are horrible published novels that exist. But just reading fanfiction, a good writer does not make. She's got to have some variety. But hey, if you do decide to beta for her, then you can tell her all of this. Even if she's likely to take it badly. She needs to hear the truth, and like others said, if she can't take criticism, she's not going to do well as a professional writer.
