I think people like to make fun of Kylo more because he's idolizes Vader and isn't a real Sith yet, so I guess people think of it as cosplay or something, lol. He's playing at it, he wants it so badly, but in the end he hasn't reached those 'depths' yet. (That, and without the helmet he does look like 'some guy', but that's the entire point.)
I think they did really well with a lot of the humour/aggressively short tempered and competence/doesn't have full control over things contrasts.
IA! I loved how chill he was during that scene with Poe, and I loved his attitude during the Rey interrogation too. He is definitely Han and Leia's son, even if he would rather not think about that.
As for Chewie's shot, given his abilities earlier in the film I'm convinced he could've stopped it, but was too distracted/distraught from what he had done. Which makes him even more interesting!
while his mask was on, his body language and speech was pretty self-assured most of the time but as soon as the helmet came of, it seemed like he didn't really know what to do/what he was doing with his facial expressions
Absolutely! There's no way that wasn't an intentional acting choice. There's a lot of good acting with body language in this film (Finn in his Stormtropper gear in that first scene, for instance), and it seemed so apparent that Kylo is 100% more confident with the mask on. He isn't comfortable with his 'true' self.
