Depends on when he turned on Luke. And how Luke does his training regime. And Snoke himself said that his training was incomplete. That could be just basic darkside things or the whole shebang.

And as I said. Rey isn't some newbie to the whole "wielding a weapon thing." And since she knows about the Jedi, but believes them to be myth, I can see her trying to dig up what ever info she can get her hands on. She's a scavenger. she could have very well found a few things in all of the wreckage. Not enough to make things super believable, but enough to rouse interest.
