He might be one of those guys who's in love with being in love, and once he realized the excited, always on feelings had changed into something more comfortable, he thought he couldn't really be in love with you.

I've dated that guy. There's nothing to do but cut him loose completely, because in a few months he'll "love" you again and the cycle starts all over.
