And it turns out I forgot a step in the damn mousse and went to spread it on the cake, saw the whipping cream still in a carton in the fridge untouched, and had a mild freak out. Oops! I think it's gonna be all right, but I'm glad I caught it in time and I feel dumb. Stupid complicated cake.
Here's a tip: if you're not making your own lemon curd, you'll need 1 1/4 cups. And although Dickinson's packaged lemon curd says it's 10oz, I think it's 10oz by weight because one of their little jars contains around 8oz by volume. So you'll need 2! I also learned this the hard way, blaaaaaah!
Also, this food blogger likes 1/8th cups. A cup (8oz) is 16 tablespoons, so 1/8th cup (1oz) is 2TB. It's a lot easier to measure out 6TB instead of trying to eyeball what the heck 3/8 cup is when you don't have a 1/8 measure. Maybe you do more baking than I do and know this off the top of your head, but it helped me a lot.
