SDF: Macross/Robotech the Macross Saga has a cocky woman ace
Macross II Lovers Again has a cocky female ace
Macross 7 has the cocky ace from the first series but now she's mayor of a city but she'll take her fighter jet out when they're cut off from the military for a while (and for the rest of the series after that).
Macross Frontier has a couple, but they're not the main focus.
Robotech Masters/Super Dimension Calvary Southern Cross: has three main characters who are all Lieutenants in their own branch of the military
Robotech the New Generation/MOSPEADA: has a freedom fighter group that includes this, plus an enemy version who pops up near the end of the series.
Robotech II the Sentinels has two, the one from the first series and a rookie pilot who has to fight for approval cause her father doesn't want her in the military (but only three episodes were made so you need to go with the novels or the comics)
Robotech The Shadow Chronicles: Has the squad leader as a woman.
--Now to be fair for all the cool stuff in Macross, there are some sexist tropes in-play, the ace in the first one fits into the "Every Amazon wants Hercules trope," where she's an awesome pilot but falls for the man who bests her (on the other hand she doesn't give up being a pilot for him, and continues to kickass)... and the more recent entries into the series have gotten more and more sexualized. But it along with GI Joe (the comic and to a lesser extent the cartoon, but gods not the second cartoon) was one of my first exposures to truly competent women in military roles who gave as much as the men.
