Some are amazing, some are garbage, some are inbetween! The Thrawn Trilogy by Timothy Zahn is the place to start. Next would probably be the XWing series by Stackpole and Allston, especially if you aren't all about all jedi all the time. Really any book by Zahn or Stover is a safe bet. I really like the JEdi Apprentice series although they can be quite simplistic--they're middle-grade novels--but there's some amazing low-key worldbuilding and foreshadowing, esp. as regards the Jedi, and Qui-Gon and wee bb Obi-Wan are where it's at.
