That only works for fantasy set in our world. If it is set in a completely fictional world, there is no reason whatsoever it needs to play by the gender rules of our world. Criticizing the existence of POC characters or independent women in a completely fictional world that isn't meant to be our own makes no sense.

Exactly this.

It seems there are things that people get so attached to that they just can't imagine a world without them. Sometimes, they're silly things (there was this guy in BSG fandom who got so upset over the colonial government not following Robert's Rules of Order, and would not be pacified by the argument that said government would neither have nor follow Robert's Rules of Order, because they're not from Earth), but typically, they have to do with social dynamics.

People experience this weird, uncomfortable disconnect when deeply ingrained norms are challenged. I think that's probably part of what drives this, and it definitely speaks to OP's point.
