Soups in general are very simple and pretty much makes itself. One of my favourites is basically just carrots, coconut milk and ginger boiled together and then blended.

Anything you can just toss in the oven is also great, like a lasagne. It will need some time in the oven, but the food prep itself is pretty simple and quick.

Then you have even easier things like grilled cheese.
