Chicken strips. Get raw strips, dip them in some beaten egg, cover them with a flour/season salt/pepper mix, repeat and bathe in hot oil for a few minutes on each side. Rest on a paper towel.

Mexi-casserole: In a skillet cook some chicken chunks. Add a jar of salsa, your fave seasonings, other drained vegetables and a cup of rice. Cover and let it cook for about 20 minutes. Add copious amounts of cheese and get it melty.
