There pretty much are no straight-up irredeemable villains anymore, and I want them back.

I wouldn't say that's true - there are plenty of irredeemably evil and hateable villains in fiction (Most of the villains in the MCU, plenty of other comic book villains, the majority of Harry Potter villains).

Even in SU, the fandom in the secret there are sympathetic and redeemable antagonists (Lapis and Peridot) and irredeemable ones (like the Diamonds are set up to be - from what we saw of them and their interactions with other characters, I don't think Blue or Yellow Diamond will be redeemable).

If anything, sympathetic/redeemable villains are often introduced alongside irredeemable ones.
