Harry Potter and Chamber of Secrets question

So I'm rereading the Harry Potter books after having not read them for about 5 years. I'm on the last chapter of Chamber of Secrets and I'm a little confused about something.

Knowing what we know now that Tom Riddle's diary is a Horcrux, I'm a little confused how Tom Riddle turning human is possible. Like, I understand that the part of Voldemort's soul in the diary was feeding on Ginny's soul so if she died Tom Riddle's soul would leave the diary and he'd have an actual physical body, but what would have happened to the Voldemort that had been sharing a body with Quirrell the year before? Where was he? Would that mean that there would be young Voldemort and old Voldemort?

Yeah there would be two Voldemorts, since he split his soul into eight pieces I guess each piece had all the memories up until the time it was split from the main Voldemort. It's quite possible that Riddle-horcrux-ghost got all his information about Harry's defeat of main-Voldemort etc from Ginny.

IIRC, Voldemort didn't even realize that the diary had been destroyed until a while after he was revived - in his speech to the Death Eaters in the graveyard in Goblet of Fire, I think he doesn't mention the incident with Riddle in the Chamber at all, he only talks about meeting Harry via Quirrel in Sorcerer's Stone. Which makes sense given that he had no idea he had made another horcrux with Harry's scar.
