Maybe she regretted writing an epilogue that pretty much only involved like four characters, leaving us to worry about how George is faring post-Fredlessness. I didn't like to think about him being all alone and sadfacing, but I don't know if this is better or what.

Yeah this is mainly why I didn't like the epilogue either >_> I waited a long time for her to finally say something about George, and now I'm trying to forget she did >_>

From what I can tell, George is still sadfacing, given that he has an nice, unhealthy relationship that, according to JKR, will never be truly happy.

No she didn't say that. She said "it seems a bit unhealthy but... I think they're happy." She didn't say the relationship was unhappy- you must be referring to the fact that she said George was as "happy as he could be." That wasn't in regards to his relationship.
