if it's "unhealthy" why did she tell everyone they got together in the first place?

Presumably because that's how she saw it happening in her head, and since she was making a Weasley family tree, it would have been silly not to include George (not that it wouldn't have come out anyway in the encyclopedia). I guess she decided they got married because that's what she thought would have been in character for both of them, given the sort of people she felt they were and the way she thought Fred's death would have affected them.
