I'll take your word for it that the woman on the left isn't a conventional sex symbol, but they're both pretty different from most of the women I know in real life.

She's very attractive, but IME there aren't too many female conventional sex symbols who are age 45-55 (her time on the show) who are allowed to have visible wrinkles and an average sized body, i.e. not super skinny.

For one thing Amanda Redman has a massive burn scar down one arm from a hot water scald. (She pulled a pan off the cooker when she was a child). She and the dressers weren't afraid to show it, and Sandra often wore short or no sleeved clothes as if it wasn't there.

I thought that was great.

And the best part is, as far as the character was concerned, nobody ever mentioned her scar or did the whole "how did you get that" routine. Just pure unconditional acceptance.

I watch this show and from the secret, I don't think it's so much that Pullman isn't conventionally sexy, it's that it's rare to see older women who are portrayed in the media as being sexy unless it's for comic relief, or she's a "cougar" or whatever. TV shows don't think twice of romantically pairing a hot 40-something year old man with a hot 20-something woman, but you'll rarely see the other way round. It's also rare to see a 40-something man dating a woman his own age, which is weirdest of all.

Pullman is unusual in that she's smart and highly ambitious in a male dominated profession, heading a team of men who are older than her AND she is not treated as though she has zero sex appeal to other men who are often her age or younger.

I wish they would have talked the actress who played the DI (or was it DSuper?) Karen Somebody, the one who retired to Spain, to replace Sandra. She would have been great.

I recommend Leverage. Sophie is definitely over 35, and definitely over a size 2, and the entire point of her character is she can seduce anyone into anything at will. Plus she has a slow-played love interest plot that's a joy to watch unfold.
