Is a Donkey punch an assault or a sexual assault? Assuming the sex is consensual, but the punch is not.

If it is not discussed prior, I would consider it assault.

I have had sexual acts done to me during sex that were extreme, and that I did not consent to* - unplanned anal (I ended up having to go to the hospital) and choking, and in both cases, I considered it sexual assault. Not assault I could pursue legal action for, but I sure as hell felt assaulted. If someone donkey punched me, I know that I would feel the same. A punch without permission is a punch without permission, in the bedroom or outside.

*And which completely changed the way I live my sex life. No more one-night stands, only trustworthy bootycalls who I have built sexual rapport with and have a mutual understanding with me about what we are/aren't down for unless it's been discussed.

Seems like it would be a billion times easier to ask you partner to clench down, if it's about pleasure, so I think it's mainly an urban myth, like a thing dumb boys brag about doing to their friends. Maybe some psychos do it to get off on the power of forcing someone's body to do something they don't want to do, kind of a semi-rape thing where they can get the high of controlling another person's body for their own pleasure without having the guts to actually rape them.

It's both. It's a sexual act that wasn't consented to, since consenting to sex is not consenting to literally anything your partner could conceive of that might fall under a sexual umbrella (up to and including insertion of said umbrella), which makes it sexual assault. It's harmful physical contact, which makes it assault.
