Have you ever published a book only to find it edited beyond recognition?
No. I've only published one novella so far, but the publisher used track changes and it was pretty much stressed that with the exception of no epithets/grammar everything was more of a suggestion than a 'you must make this change or we will not publish it. HOWEVER, if you don't accept a change, you're probably going to have to justify to them why you didn't make it (ie a stylistic reason for some things, etc).
Have you ever gotten weird revision requests?
Not really. For mine I worked with the same editor through the whole process (4-5 back and forths), while a friend with a different publisher had a few editors and it did cause some confusion because one editor would change one thing, and another would put it back. :/
And if you've self published a story online but you want to get it published through a company, will they still publish it? Would you have to delete the self-published version from the internet first?
This depends on the publisher to be honest. Some publishers will ask for 'first publishing rights' which means if it's been published elsewhere (even just on a blog online), they might not take it. It's best to ask the publisher directly if they have a problem with it being online at the same time, or whether it's something you'll have to pull offline before they agree to publish it.
