Yeah, I would have like that too.

I like to think her signature mon would have been a Clefairy since it was initially planned to Pokemon's mascot and its evo line works lot like Pikachu's.

Why do you think she's non-canon just because she doesn't show up? That doesn't mean she doesn't still exist.

Would have been neat to have had the option to fight her, or for her to be mentioned or acknowledged, or anything.

I genuinely do not understand Pokemon fandom's obsession/fascination with Leaf/Blue/Green and her canon status. She still exists and will be included in every subsequent remake of RGBY. Red will always be the face/mascot protagonist for the whole series and there isn't really anything wrong with that. Much like how Blue/Green will always be the mascot of rivals.
