Yes, you can add whatever vegetables you want. Mushrooms are an option too. Onions garlic ginger I wouldn't recommend for the GERD issue

Search around for rice congee or rice jook recipes, there are a ton of variations and the porridge creaminess is from the rice and not milk, so most of them should be ok. There are chicken variations and seafood too. It's traditional Chinese & Korean food for upset stomachs :)

I kept getting ginger recommended to me, back when it seemed like an upset stomach issue, but apparently it just makes GERD so much worse.

Dw, probably most of the recipes you find will be fine without ginger, I never use any
