You can make porridge with just water. I don't know if it tastes worse because I've only ever had it without milk.

My reflux-y foods may be different from yours, so I don't really know how helpful I can be.
I mostly try to eat more during lunch/afternoon tea and then just have very small plain snacks so I won't be digesting much when I want to try sleeping.

If you have some good staples that don't aggravate your reflux (rice, crackers, whatever) you could try eating them with your may cause reflux foods. I keep lists and a food diary. My dietitian made me do it. It's sort of helping.

Don't take my advice though. I still try to eat tomato every couple of weeks and hate myself every time. It's on the "definitely going to make me regret it" list.
