so you also said minimal chocolate, but how would you feel about jack and coke/rum and coke brownies??

Rum and Coke Brownies
1 1/2 C all purpose flour
1 tsp baking soda
1 tsp salt
10 oz bittersweet chocolate chopped
1/2 lb (2 sticks) unsalted butter, softened
1 C granulated sugar
3 eggs
1/2 C soda (I use vanilla coke for extra flavor)
1/2 C white rum (I use whatever rum I have at home)

Preheat oven to 350 F. Grease 13x9 pan with butter or cooking spray.

Combine flour, baking soda, and salt in medium bowl.

Place chocolate in heatproof bowl set over pan of gently simmering water stirring until chocolate is completely melted. (I use a double boiler)

In large bowl, beat butter and sugar with an electric mixer until light and fluffy, about 3 minutes. Add eggs one at a time, beating well after each addition. Add melted chocolate and beat until well incorporated, about 2 minutes.

With a wooden spoon or spatula, gently stir flour mixture into the chocolate mixture until just combined. Gently stir in the soda and rum and pour batter into greased pan.

Bake the brownies until a toothpick inserted in the center comes out clean, about 35 minutes. Cool brownies in pan completely.
