"Rivaille" came before there were official translations because they wrote his name in the manga like it looks: Re-bi (Reh-bii).
Problem is, "Levi" doesn't sound like it's spelled to a Japanese person. To be pronounced correctly, it needed to be "Ri-bai"
So fan translators completely guessed at the name, and got it wrong, but wrong spellings/pronounciations still stick (for a professional snafu that persists to this day: Viz, "Inu Yasha", and spelling "Tessaiga" as "Tetsusaiga").

But what you're saying doesn't make sense. First off, afaik the spelling of his name hasn't changed, and it was never spelled レヴィ, but always リヴァイ.
Secondly, all three versions are pronounced basically the same, with variations - "rivai". "Rivaille" is still pronounced the same way - it's most definitely not pronounced anything like "re-bi". In the anime too, it's always pronounced ree-bai.
The only confusion was that people saw "rivai" and didn't know what to make of that, so somebody came up with the "rivaille" spelling. I mean, if his name had been written "re-bi", who the hell would translate that as "rivaille" which is pronounced "ree-vai"?
Nobody that I've seen basically ever pronounces his name leh-vee (I mean, except me and other Hebrew speakers. Because that's the original and we can't resist).
It also doesn't change the absolutely ridiculous fact that calling him Levi Rivaille is basically "rivai rivai".

Also, anyone who takes Game Theory's "theories" like gospel truth. I'll give MatPat credit for his research in some episodes, but the majority of them just reach WAY too hard (Sans is actually Ness, anyone?) or make absolutely no sense whatsoever. But some people, usually those who lack critical thinking skills, just eat this shit up and actually believe all of it to be immutable and 100% true.
