I haven't read any of those, but now I will. It honestly never even occurred to me until I watched Drrr and I ended up having such a crush on Celty. But, now I'm trying to find more stuff that has decapatation in it or headless characters.

I really can't recommend 3x3 Eyes enough. The male lead is a Wu, which is a kind of undead zombie without the rotting. He survives being decapitated multiple times.

I know Naruto can be a cringey suggestion, but the Akatsuki has two characters that lose their heads at some point (one is a living puppet while the other is a masochistic immortal, so they carry on just fine), and it basically kick started my decapitation kink. I highly recommend it.
