I only watched the first Ghost in the Shell movie.

I don't think we see how she looked like before the accident that turned her into a brain inside a robotic body, but she's a Japanese character, and it's assumed that her robotic body looks like a Japanese woman.
So if you had a freakish accident and you would never get your original body back, wouldn't you want to have a body that had a passing ressemblance to the one you had before? I don't think Kusanagi has various cyborg bodies lying around she can change like one would change their clothes. So her body would be the one she's stuck in most of the time. I guess she could want to have a "better" body than her former one, but why a complete race change?
