that's a cool exercise that every director, casting director and screenwriter should try once in a while. headcast the entire movie without any white people, then look if you have to even things out for believability according to the setting. Sometimes it's even more likely to have a group of a certain ethnicity present, because sometimes race serves as a common ground in diverse environments. In fact, where I live, anyway, it's much more likely to be friends with a small group of black or asian or other non-white people than just having one "token" friend or colleague of each race like we often see on TV and in movies.
I really dislike this sort of race-bingo they often do, lately (I loved hannibal but that part made the fbi look like a sentai-team of ethnicities). I'd rather have "unbalanced" casts that tend towards a group of people that is not white.

don't get me wrong, I love Hannibal, but IIRC they had a) exactly one asian chick (at all times, got a new one in season 3 after season 2 offed beverly, though she was not with the fbi) exactly one black dude and one jewish dude on the supporting investigator team (usually I would tend to not counting that as nonwhite ethnicity but Aaron Abrams kinda seams jewish typecast, so kinda on the same level as mikkelsen as "exotic european type").
yeah, there were (recurring) minor characters of different origins and ethnicities but they, too, seemed kinda token between the default white people.
I don't think there's that much inherently wrong with imagining/writing/casting mainly white people, because sometimes that's just the way a writer or director has grown up, and they can't help it. Joss Whedon has the same "issue", and I still love his Movies and shows. It would be better though if this were balanced out by other people/shows/movies.

I've heard that Simon and River Tam were supposed to be played by Asian actors, but the studio execs nixed that idea.
