I'll take the book canon of his inspiration drawn from his parents and Leia, personally.

Sure, but since Wedge is never mentioned once in the backstory I've read, I just don't eat up the idea of the more predictable male-to-male mentor thing unless their relationship was mainly professional. Don't get me wrong, I understand that Wedge is a fan favorite so it's not surprising people jump to this idea, and surely Poe has at least heard of him and has a lot of respect for him. But I'm more into who he learns from ideologically rather than based on skill, why he probably pushed himself to train hard enough to be one of the best rather than necessarily learning from the best like that would be the natural explanation for his greatness.

Read Before the Awakening and Shattered Empire for canon Poe backstory.

Shattered Empire (comic book about his mother while she served in the Rebellion), Before the Awakening (plenty of background info & how Poe got into the Resistance) and the Poe Dameron comic book.

Wedge appears in the new canon but not in Poe's story so far, he interacts with Temmin "Snap" Wrexley/Greg Grunberg/Fat Keanu's mother in the novel Aftermath that I have yet to read.

Actually I just want anything involving Wedge whatsoever, since he is my favorite Star Wars character. I refuse to accept that the X Wing novels, at least, aren't canon anymore.

Nah, he just took after his really badass mom (and was possibly given some Force powers by the Force tree Luke gave her to plant in their yard).
