Not that long ago I made a recipe I found online that someone came up with for lembas. It was basically shortbread with honey in it. I made it with a gluten free flour mix (rice flour, potato flour and maize cornflour) so Mum could try it. If I ever make it again, I should cut down the proportion of rice flour and the amount of sugar.
