I don't think it was self-defense, Lucretia was backed against the wall when Crixus stabbed her,

Not immediate self-defense in the modern sense, but in my opinion the entire Rebellion is a form of self-defense. If they hadn't successfully attacked and killed the Romans in the Ludus they would have remained in slavery and died (especially Crixus considering one of his owners, that is Lucretia herself, tried to poison him that very day). Since they could not rely on a legal system similar to ours to defend them, violent rebellion or acceptance of slavery and death were basically their only choices.
