I used to draw floor plans for places I'd read about in fantasy novels (and maps, too, if the author didn't supply them). I loved figuring out where things would be based on descriptions and all just filling out the physical world the characters inhabited.

I was really inspired by Karen Wynn Fonstad's Atlas of Middle Earth and Atlas of Pern but wished she could be more imaginative when it came to buildings and floor plans. (Everything is a rectangle! Rivendell? ALL RECTANGLES ALL THE TIME!)
