Do you actually pronounce the word out like that? I thought it was just a written shorthand and you would say "woman of color" aloud, or in your mind when reading it

No, it's always PoC (Pock) and WoC (Wock) to me. Maybe it's not supposed to be but that's how it reads in my head.
