I'm going to leave a suggestion, but I'd suggest to wait for the third of the trilogy to be published (it could be a year or two). The Kingkiller Chronicle by Rothfuss is well-written but has a good flow, it's not perfect but it's an interesting read. I was bored with fantasy, same as you, but these books got me hooked like I've never experienced in years. Start is slow but the ride is worth it.
