Erm... I do have studied linguistics and though germania languages were not my focus, I must inform you that yes, the firm of yiddish as it's known today is in fact a dialect of German. It's "Jewish german" quarter it's denomination (yiddish is short for yiddish daitsch) and your unerstanding of the term dialect seems a little narrow tbh.
the way I see it your view on this topic is clouded by either some sort of invented tradition Jewish self image construction that negates the very diverse Jewish identities that existed in Europe or by some sort of assumption that I'm an evil German trying to appropriate Jewish culture.

Also the reference to Germans not understanding it is not about the language. Most people would simply assume though that it's a weird variety of the Pfalz or rhinish dialect, because it's perfectly intelligible (the specific sentence used in the joke), though most would not recognize it for something specifically Jewish and just not get the joke.

Also i don't really get how you just jump to feeling insulted. Rediscovering and re-normalizing Jewish roots in European culture and vice Versa seems like a perfectly positive thing to me. And feeling sad about the loss of that connection and excited at rediscovering it is kinda natural and rather apreciative than meant to insult, wouldn't you agree? Is it the term "dialect" that's the problem here? because that might be really a problem of you meaning its everyday meaning while I used the word I was taught when studying linguistics which is a bit less ...diminutive as the common understanding would have it.
