Maybe I'm just reading things in because of my aunt. There's nothing I can point to in the movie itself to prove that Gothel had any genuine feelings for Rapunzel, and plenty to indicate that any feelings she may have had were warped beyond recovery.

You probably are. Because to me it's painfully obvious that all Gothel cared about was Rapunzel's magic hair. Like anon below me said, if she could use the hair without a pesky prisoner attached to it, she totally would've done so.

Case-in-point? When she says "I love you most" what part of Rapunzel is she touching?

To be fair there was the traveling several days to get the special item Rapunzel requested. She didn't have to do it. Though it could also be read as appeasement to keep the girl contented.
