I don't want any Doctor/Companion pair to travel together forever, even my favorites. The change in Doctors and in companions is a big part of the enjoyment of the show for me.

Same. I wasn't really happy with Clara's ending either. But then again, I don't think there's been any companion where I was 100% happy with their ending.

I haven't watched (haven't really wanted to, which is a shame because I used to be so into DW), but I'm really curious.

Surely you could do that anyway, since between most pairs of Doctor Who stories there is a theoretically infinite gap in which hypothetical further stories could happen? (Indeed such things have sustained vast, vast amounts of spin-off media)

Fact is you need to knuckle down and watch Heaven Sent already, because it's the best shit ever.
