I made my mom a cake and dinner for her birthday.

It was chocolate chiffon with boiled icing and it came out quite beautifully.

Also gonna hang out with a friend on Sunday woot.

I've never heard of boiled icing! It looks pretty neat. How is the texture/taste? I hope your mom enjoys it!

So... we don't really have marshmallow fluff here in Canada (well, you can find it in some of the bigger WalMarts now but it's not super popular) and the only time I've had it was in the states. I remember it being pretty goopy and having a somewhat disagreeable taste.

Boiled icing is essentially like a cleaner tasting, stiffer, nicer marshmallow fluff that is easy to add flavourings to. Usually people will add a little vanilla or almond extract or mint whatever they have on hand; I went with rose water because I figured it would offset the cotton-candy like sugariness.

It's not that easy to make if you're unfamiliar with candy making... Ideally you should have a candy thermometer and a stand mixer if you want to attempt it on your own, but once you get the hang of how fast to pour the sugar syrup and how long you need to beat it, it's actually not terribly tricky.

It was definitely a very satisfying cake lol. It worked pretty well because I intentionally made the actual cake part a little bit bitter to play off the supersweet icing.

Not the kind of thing I make more than once a year though lol.
