The Princess got turned into a dragon, the thief got turned into a princess, and everyone else got pretty much screwed.

There, you are caught up. The first book is a fun and easy read and reading it certainly will enhance your enjoyment of it, but the first chapter basically recaps everything you need and the first person narration does the rest. While the three books are a trilogy, this book is very much the Empire Strikes Back of the trilogy. You won't be able to follow the third one without it, and once you've read it it will change somethings about the first one, but you can jump right in with this one and you'll be fine.
