Pretty much any of the vegetable soups I usually make, with the exception of French onion. Leek and potato soup and broccoli soup get a flavor boost from carrots, celery, onions, garlic, and sometimes green pepper, with potatoes for thickener and lima beans or peas for protein, and lots of spinach pureed in so they're bright green. Then they get garnished with unhealthy sharp cheddar cheese or sour cream, or in the case of mixed vegetables, with pasta, pesto, and parmesan. That or dumplings.
My favorite healthy warm weather meal is a big salad with tahini tofu dressing, mixed lettuce, sunflower and alfalfa sprouts, white beans, red bell pepper, tomato, avocado, finely shredded red cabbage, and finely shredded carrot, garnished with shredded cheddar and tamari toasted sunflower seeds. I don't make it that often, because it's a lot of ingredients and unlike soup it doesn't keep well if I make a big batch.
