i have a cream cheese dilemma

[personal profile] saku 2016-06-13 01:57 am (UTC)(link)
i brought cream cheese to work with me and at the end of the night i took it home in my bag. the next day i realised i had left it in my bag overnight. it was unrefrigerated for like 10 hrs total and tbh like i know some folks keep cream cheese sitting out overnight when they make cheesecakes & stuff but idk . it just makes me nervous. it's the jalapeno kind btw which is amazing but idk if the jalapeno bits would affect it at all. it looks and smells fine but i have an intense and deep-rooted fear of puking for some reason so i dont fuck with food thats generally been sitting out or past it expiration date or whatever

I've never heard of people leaving cream cheese out overnight when making cheesecakes; I only leave mine out for 1-2 hours to soften (depending how cold my house is).

I'm actually terrible about food safety when it comes to leaving out leftovers (and it hasn't harmed me yet), but if you're nervous about eating it, then I'd just toss it.

I was about to post the exact same thing. I've never left cream cheese out overnight when making cheesecake (and I see zero reason why that would be necessary) but I make a ton of things with cream cheese, and I never leave it out more than a couple hours to soften.

I'd probably throw it away, honestly.

A couple Christmases ago I made those Oreo truffle things with cream cheese and my dad ate one after it had been sitting out for a few hours and got horribly sick, throwing up and everything. Of course, it could've been a total coincidence and it wasn't the cream cheese that made him sick, but it's made me paranoid about eating things with cream cheese that have been sitting out for awhile.

I often leave cream cheese out for way longer than 1-2 hours because it simply won't soften enough in such a short length of time. You would probably be fine if you ate it, because it's processed cheese. But if it makes you nervous, just toss it.

Better safe than salmonella.
