A quick check on FF.net shows that, of 46.1 thousand works under Fullmetal Alchemist, 25.3 thousand aren't marked in the genre of romance. And on AO3, of the 8125 works in "Fullmetal Alchemist - All Media Types", 2876 are marked Gen.

So maybe you're just shit at finding genfic.

There's actually a lot of genfic for FMA.

(And is OP saying Ed/Al is uncommon? Because no... it isn't.)

Having been in many anime fandoms and many Western fandoms, I don't find that fic is really any shittier in anime fandom.
