I think Byakuya has more personality than a lot of the other captains, and I think that was shown rather clearly in his part of the Soul Society arc. The attraction is, of course, to break that icy exterior to see what lurks underneath. Which is why I enjoy the moments of insecurity, like for example how flustered he became when Ichigo popped in through the window at the end of the arc and suddenly calls him by his first name (Ichigo usually forgoes any formalities, but Byakuya didn't know this).
For Byakuya, rules and appearance are hugely important, though he has worked through some of his issues. I have rarely seen a character in more need of relaxing. XD
