Extrapolating based on the fact that he openly dates guys and openly talks about liking guys to say he's "probably gay" is exactly the right thing to do.

But again I say, it's only reasonable and appropriate to tell people he's "probably gay" if you're unwilling to accept bisexuality as a legitimate option. The non shitty thing to do would be to tell your friend he might be gay, or you think he's gay. Not to state things as fact and erase an entire sexuality.
