Toad in the hole is tricky to do well, because if you don't get the temperatures right, it turns out flabby and disgusting. You also need very good sausages. You have to (a) precook the sausage and (b), crucially, make sure the pan and the oil are screamingly hot before you pour the batter in.

It also helps to have gravy.


Scones, on the other hand, are pretty easy. Keep your hands cold and don't over-mix, and you'll be fine.
