Okay, I've actually heard this isn't true, it's just that most societies that still practiced cannibalism when nosy westerners were around to ask only really had access to birds, fish, ... and pigs. People supposedly taste more like beef. I imagine it depends a bit on what you eat, too. Man, I wouldn't want to eat someone who only ate fast food.

I heard it's more like veal. I've lost the reference, but a guy once ate a volunteer (in the 1800's I think - I believe it was a British man in France) and wrote a detailed description of what it tasted like and what would go best with it. Long and short, it tasted like veal.
