I've had deep fried alligator in New Orleans and I apologize for the cliche but it did taste like chicken. Somewhat tough, dry chicken. Bison tastes like lean beef.

Alligator sausage is good. Almost had a kangaroo burger at the same place.

We had little breaded gator bits once, and it does taste like chicken!
