my brain is frantically trying to insert vowels ("Stroč? Satrč? Stirč? SOMETHING?!)

That's not that bad if you're at all used to vocalic r and the st blend common to most European languages. (Granted, it's not my first brush with Czech, either.)

I admit I do keep trying to pronounce the z like c, because of German.

Nah, it's not too bad - it's usually just that people go wtf on first glance. But they're really short words - even in Czech there's a limit to how much you can do without vowels.
