One time won't hurt.
The reason why henna straightens curly hair is because it creates a layer of structure around a strand, so it becomes heaver -> pulls it down, creating "straighter" hair. You can minimize the effect by rolling your hair up in small ringlets (use a shit load of bobby pins).

It's a bitch to wash out, though. Get a wide tooth comb.

Also if your curls are dry, try using argan oil or something similar. Take a small amount, rub it in your fingers and then spread it on your ends. No need to wash it out, just don't put on too much.

I recommend you blow your hair with cool air after washing, because that way it "locks" the structure. If your blow-drier doesn't have a cool setting, wash your hair with cold water and let it air dry for a few hours before taking out the pins.
