That runs into Poe's Law, though. If you're saying something racist in order to demonstrate how absurd racism is, can you really say something more absurd than what actual racists say?

(To be fair, the game has surprisingly few racist jokes. I'm just giving that as an example.)

The thing about south park is that it is AIMING for fearless balls-out nothing-is-sacred satire, but it doesn't always succeed. And sometimes it gets lazy and falls into Poe's law grossness, and sometimes it's legitimately brilliant and hilarious. Some seasons have more consistent quality than others, but the individual episodes are VERY hit-or-miss with a really wide range, not to mention YMMV in terms of your personal responses.
